An entire beef carcass will yield about 15-20% of its weight in trimmings. At my shop we grind three different types of ground beef: 80% lean ground chuck, 85% lean ground round, and 90% lean ground sirloin. Each type is made of trimmings from that specific primal cut. 80% lean ground chuck (shoulder) will be the juiciest and most flavorful.
That’s just like, your opinion man. Also the main reason bison tastes different is their diet as well as lifestyle. Bison are pasture-raised, get a lot of exercise, and eat grass most of their lives which creates a different flavor in the meat compared to grain-fed animals kept in pens/lots (though the majority of bison are still finished on grain in feed lots near the end of their lives).
In Columbus Ohio ( amongst other locations) is a place called " Ted's Montana Grill" where alongside the beef steaks the serve bison steak/burgers/ect. Its a nicer restaurant, and not cheap. The Bison Delmonico (?) Cut many ounce steak is ~$27, but its soooooo Good ! The other stuff is nice too, but I haven't been back for a long time.
